Mediterranean Chicken This popular meal can be prepared without chicken; served with brown rice, quinoa, or noodles of choice |
Saturday's Luncheon Soups
These were a big hit with large pots being almost fully depleted~!!!
Vegetable/Beef featuring Cabbage (vegetarians, leave out the meat!)
Chop 1/2 head of cabbage and place in large stock pot, just covering with water (not too much) - boil, then simmer till leaves soften.
Saute 3-4 white onions (chopped) in olive oil, set aside.
Saute 3 green peppers (chopped) in olive oil, set side.
Saute 1-2 lbs of ground meat, drain fat and set aside.
After cabbage softens, combine with:
Onions, peppers, ground meat
6 sliced carrots
1 lb green beans cut into 1-2 inch pieces
1 scallion chopped
1 - 48 oz V 8 Juice
1 - 28 cans diced tomatoes
1 package of Lipton Onion Soup mix
1/2 cup balsamic vinegar
Simmer for at least two hours...serve with roughly shredded Parmesan or Romano cheese sprinkled on top.
This soup freezes spectacularly...I love it!
Can and perhaps SHOULD be doubled!
